Singapore National Culinary Team Crowned Champions at the international FHA Culinary Challenge

SINGAPORE, [11 April 2025] – The Singapore National Culinary Team has triumphed at the prestigious culinary competition, the  FHA Culinary Challenge 2025. Their exceptional performance throughout the two-part challenge secured their spot as the champions for the 2025 competition, beating international teams from Australia, South Korea, China (Regional), Indonesia, Malaysia, Taiwan, Thailand and Azerbaijan.

Led by  Team Manager Elvin Chew and Captain Ong Jing Qin, the accomplished team comprised of Tan Su Hoo (Head Chef, Alma Restaurant), Sim Wei Hong (Head Chef, GAIA Chinese Culinary Pte. Ltd.), Neo Jun Hao (Chef Owner, HUE Original Pte. Ltd.), Ang Kian Shiang (Chef De Partie, One Farrer Hotel), and Pastry Chef Wee Pai Hau (Pastry Chef, One Farrer Hotel).

Says Team Manager Elvin Chew, “We are very proud of what the team has achieved – they have gone through rigorous training and we have come a long way from where we started. This is a new team and we have high hopes for the future.”

In the preliminary Restaurant of Nations Hot Kitchen Challenge, the team impressed judges and diners with their meticulously crafted three-course menu: an appetiser of Patagonian Toothfish and Shellfish Roulade Seafood Parcel, Target of Patagonian Toothfish, Crustacean Sauce; a main course of Slow Cooked Yellow Chicken Breast, Yellow Chicken Pie, Stuffed Morel Mushroom Glazed Carrot, Potato Croquette served with Chicken Jus; and a dessert of Citrus Rice Fritter, Lemon Verbena Ivoire Mousse with Granny Smith Apple Compote, Apple & Ambarella Sorbet Compressed Apple with Yuzu Espuma.

The team also impressed at the second category of Chef’s Table Challenge, where they served up compositions for the Chef’s Table to the judges.

Says President of Singapore Chefs, Association, KK Kong, “We have high hopes for the future. Singapore Chefs’ Association has a strong history of grooming chefs to represent Singapore internationally in competitions and we will embark on more initiatives to build more talents.”
